They actually thought somebody stripped the meat off wing bones to make boneless wings. These were grown ass adults.

He is an otherwise smart guy, very educated regional wine rep. A new East Coast Wings + Grill opened in the neighborhood and they bought a sh!tton of them before the party. Never been there but I've always hated the marketing gimmick of calling them boneless wings and not chicken nuggets. They do seem to be a little gnarlier than regular nuggets, but still.

This is a good question. Smoked some leg quarters once, probably won't do it again. Boneless/skinless chicken breasts actually turned out great so I'd much rather do those.

Simple, the end of the argument is that what makes wings what they are is the skin, not the bone, or even the meat. Wings can either be deep fried or oven baked (perhaps with a light dusting of flour and spices), but that crispness of the fat, the texture, and taste of the skin is what makes it "wings".

The chicken nugget that is BATTERED is not "skin". You cant duplicate that taste and texture of skin. All you are doing is dunking a battered chicken nugget in a some dipping sauce, and prey the poor sap who paid on a premium on "boneless wings" is too dumb to notice that he isn't eating actual wings.

it was 4.5 pounds. after it reached 175 i wrapped it in foil and then took it up to 205 quickly and then wrapped it in a towel and put it in a cooler for 2 hours.

Chicken cooked way too fast. put it on too early before charcoal had a chance to calm down so temp was at 315-320 instead of 275. Skin wasn't able to crisp up and came out rubbery. Meat was tasty though. Pulled it all off the bone and put in tupperware for snacks/lunch for the rest of the week

In some circumstances, but in many they are just breast meat cubed and battered (without being ground up like a McNuggem).
