weak sear boyo. get a screaming hot pan (Glug of oil like grapeseed or canola) sear the fk out of it. toss a knob of butter with garlic cloves and thyme and baste the fuk out of it. then eat.
dont over think it with the sous vide boyo.

looks dry. should’ve used the juice from the steak, butter, garlic to put on the rice and meat

SOUS VIDE GANG UP IN THIS BITCH! We taking over the kitchen.
Pro tip: pat it dry and then chuck it in the fridge for 20 minutes before searing if you're not in a hurry. This will make sure it dries completely and cools enough to allow you to scorch the chit out of the outside.
Get that pan hot as the fires of ass before going to town on that beef. If your avocado or grapeseed oil isn't threatening to set off the smoke detector, it ain't hot enough. Keep your melted butter separate until you are ready to baste.
