Went to school right in the middle of that Austin to DFW drive and can confirm. Kolaches everywhere, at every gas station and grocery store.

Usually they have like a sausage in the middle though; you filled them with apricot?

They're these little yeast-based pastries with a fruit or cheesy (usually cream cheese or farmer's cheese) center. Such a treat!

Cream cheese is my favorite at the Czech Stop.
Their Cinnamon rolls are amazing too.

The cream cheese are so, so good. I could eat a ridiculous amount in one sitting! When I was a kid I'd always ask for a deviled egg or an egg salad sandwich from the Czech Stop. What a waste!

I think the meat-filled ones are Klobásník, and the fruit / cheese ones are Kolach. The jalepeno cheddar ones....oh lawd.

I would not call the first thing koláč, those are buchty, although a buchta is usually more cube shaped and sprinkled with sugar. See e.g.https://www.toprecepty.cz/recept/537...hty-s-povidly/

However, it is possible that they were baked according to some regional recipe and both probably taste better than they look.

EDIT: I somehow missed that the koláče were not baked yet, that explains the color. Sorry. I thought the Americans may have some lightly colored baked goods, just like your bread is different from ours.

Question for you, we always ate these prune-filled steam dumplings that you'd dip in butter growing up and called them "shishkies." I can't find a recipe anywhere, so I'm wondering if that was just a regional name for them. Any clue what they might be?
