Sure!

The entire thing lays out the recipe step-by-step in 50 images/videos.

The biggest takeaways are:

1. Roast your chicken to gain a fond on the roasting surface that you can deglaze with wine, broth, etc. Save the rendered fat/juices.

2. Sautee some tomato paste, onions, and garlic, don’t skip this step. Tomato paste is a huge umami booster.

3. Use fresh aromatics like bay leaf,
Thyme, sage, rosemary, etc

4. Don’t forget about acidity. Add a dash of lemon juice, apple cider vinegar, or white wine.

5. Make sure there’s enough salt and pepper to your taste.

6. I think a dash of soy sauce really helps a lot of dishes.

This is chicken, onions, garlic, celery, tomatoes, parsnips, white cabbage, and carrots primarily.

High-protein bone broth consists most of the liquid. I did add some spring water and two types of chicken bullion for flavor.

The trick is to use bone broth for added protein, and just load it up with veggies. Healthiest most nutrient-dense soup in the world. High in fiber, low in carbs, and the only fat comes from chicken and olive oil. Filling and hydrating, and tastes good af.

And no rice or noodles needed!

manhattan clam chowder has been my favourite recently right out campbells can but id like to substitute clam with chicken and try to make it

It took over an hour at anywhere between 350 and 500 degrees. I had to watch it because I didn’t want it to get burned.

I also had to drain the juices a couple times to prevent it from steaming and allow it to brown. I saved the juices and added them back later.

Honestly the canned clams and clam juice taste good af, you can use fresh clams if you want but I don’t think it’s necessary.

Manhattan clam chowder would just be a red tomato broth with clam juice and clam meat, and some aromatics. Wouldn’t be too hard to make.

Korean soup (doenjang-jiggae), creamy chicken and rice, seafood chowder (Cod, shrimp, scallops), spicy albondigas, zuppa toscana, caldo verde, and a chicken tinga soup.

I freeze and vacuum seal so they taste FRESH forever. I take this soup chit SRS.

I spent most of the time relaxing, but it did take a while to make. Saves time in the long run since I freeze it in Tupperware containers and can have it whenever I want.

Soup scales very well. It takes 10% more effort to make twice as much, so you make a big fukk off batch and give a bunch away, freeze some, whatever.

Hell yeah I have some big frozen containers of my French onion to my parents, sister, and a co-worker. And I have a ton left for myself and already had it 3 times. Definitely a good time-investment!

I freeze it overnight in 8" silicone brownie pans (they hold 64 ounces). I can cram 15+ vacuum sealed blocks into my small freezer. I give a lot away too, so this way I don't lose any containers.

I have some other stuff in the door, but there are pretty much 0 good deals on meat because fukkin pandemic. So I'm very soup heavy right now.
