I would consider this about the highest quality knife you can buy without being custom made or buying into all that Japanese hype which if that's your cooking style fine but beyond that not really buying into it much myself. I almost bought Henckels by accident not realizing it was the poverty lower tier version but the all had Full-bolster and I don't like that the cutting edge doesn't fully extend to the back of the blade and grip wise it doesn't feel good in hand because I was taught the blade pinch technique and that's what feels comfortable to me so having a full-bolster would've sucked especially for sharpening in my opinion so I ended up with Zwilling on sale for the same price I would've paid for Henckels on sale since normally Zwilling is reasonably more expensive then Henckels so I had a great opportunity to snag a top tier knife for the price of the lower quality version when both are on sale. Feelsgood.exeYeah I just use mid tier Japanese knives, not custom handmade by master level American hipsters.

My masamotos are excessive and works of art, but not as practical, I dislike pure carbon from a line cook / regular use perspective due to discoloring. But they are so fukking crazy sharp.

Got it from a cook I worked with for 40bucks, he didn’t like it cuz it kept chipping on bones, first thing I did was dull it out and still have it 14 years later. Just talked with the guy I bought it from like a year ago and he is on his 3rd cleaver since then. Lol.

Edit: also if you notice it’s the only hybrid style I have, my other brands are single bevel Japanese style. But I worked under several very accomplished Japanese chefs.

Last year I've bought a 300$ Japanese chef's knife fromhttps://japanesechefsknife.com/
It's the Hattori kitchen forums gyuto
It's nice and all, but it doesn't make a big difference. You can do the same sort of work with a 20$ knife...
