Thought about a Traeger but decided to go with a Webber Smokey Mountain instead. Use it mostly for brisket, chicken, ribs and lamb.

I find steaks are better when pan seared (usually after a reverse sear) in a cast iron.

use smoker for reverse sear and finish in a frying pan for maximum wood fired gains.

Also idk what you did to that tritip OP but it looks horrible. Should be edge to edge pink, you dun goofed hard with that jazz. figure out a reverse sear, or sear and then indirect/oven finish, or just do a better job in a pan, but either way that was not well executed when you end up with half of it well done and then half med rare

it was coldwe have ocd raw meat never sits at room temp in our house, I won’t even leave deviled eggs out as apps for more than 30 minutes with out getting wigged out.

The tri tip could be better, srs.

I like to reverse sear, starting w/ a relatively low temp to get a good even reading throughout while getting a good smokey flavor. Once it’s to temp, remove it and crank the grill or cast iron to high and bring it back for the sear.

You cross cut the sirloin but it’s not over cooked it’s off colored because it’s slow cooked and you let it rest. All cuts lose some color at rest but sirloin more so. Not bad at all, 8/10.

did not know! :3 I don’t know much about cooking meat. So I just google it but I’ve learned a lot in this thread.

Would have putting it in the Traeger at room temp made a huge difference? Think I might have to try that next time

It’s a pretty important detail to place all meat on the grill at room temperature to be honest. You won’t get sick, most dry aged steak you eaten in a restaurant would disgust you at the sight of it before it’s cooked so letting one sit in your counter for an hour won’t hurt anything.
