Misc steak experts get in here

How do you cook a steak like this? has a perfectly cooked warm pink center. Mine never look like this and I've tried everything.

Turn the heat up burns the steak on the outside.
To little heat and it doesn't cook the center.


There's some kind of magic going on here I'm not getting.

Oven low and slow (200), finish with a sear after a rest period of 10 minutes.

That kind of steak can be cooked with water (sous vide). It was vacuum sealed and put in hot water. After it was cooked they seared it for 30 secs on each side.

You can youtube it. I dunno if the steak in your pic was cooked this way, but sous vide can achieve the same result.

I just did a reverse sear,, instead of using my oven I threw it on my electric smoker at 200 for an hour.

Surprisingly came out really damn good

yeah this. I haven't cooked steak for myself in awhile but this is what I hear is best. Season with salt then let it sit for a little while

I knew about sous vide, but just reverse sear in my toaster oven and then pan sear it. Did not know about the searzall, might just get one. Repped

Sous vide then sear for best results. Second best is reverse sear. 3rd best is let it sit for an our at room temp and cook it on a grill with a thermometer (not really ideal for filet tho).

All these phaags in this thread talking about oven and hot water , Jesus christ. Get yourself a weber bbq and be a man. Put about 20 coals in the middle. Put the sucker in the middle with the lid on after the coals are Grey. 5 min . Flip it. 5 min more , take the lid off and let it flare up and char the out side to your liking flipping it every 30 seconds or so while it's in the fire . Be a man. Cook a steak like one. If someone tells you to cook one in water or a oven they are a vegan

But seared on the outside and rare in the middle is ideal. Seriously though, practice is what makes the best steaks. I had to eat a lot of overcooked meat while I was learning. Find a good deal on some sirloins and cook often for good protons and practice. For me, the best way to learn is on a gas grill--quick, easy, and consistent cook while you are learning. Oh, and if you haven't learned to enjoy med rare or rare, you will eventually. It's criminal to cook a good steak further than med rare!

Some tips that changed my steak game.

1. Dry off the steak with paper towel before seasoning

2. Allow steak to get room temp before throwing it on the heat.

3. Use a lot of salt, it helps drying it further.

I sear and butter baste it in a pan over medium high heat, then put it in the oven at 350-400 degrees (depending on how thick the steak is) for 5-7 minutes (again, depending) then let it rest 3-5 minutes

Personally I heat the grill to 500, throw the steak on and let sit 1:30. Then flip and let sit 1:30 searing it. Then turn two burners off leaving the burner on that is not under the steak. Let it cook another minute or two from indirect heat. Cooking a steak is super easy. Also try to let it warm up to room temperature before grilling.

sous vide -> pan sear on cast iron
10/10, every time.


typically i prefer pellet grill at 300f to get the steak slowly to ~125-127f then pan sear on cast iron with butter/rosemary/thyme/garlic. not as tender as sous vide but better flavor. did it the other night for valentines day

Steak in the OP photo without a doubt was that stupid ****git soo vee bullsheit followed by 30 second sear. It looks a lot better than it tastes.


To make an incredible steak, get prime, choice is for plebs, aged isn’t needed, personal preference, salt, pepper, garlic, rosemary, be reasonably generous with your seasoning amount, get a Weber 18 or 22 inch BBQ grill, throw a full chimney of lump charcoal, natural fire starter, open all the vents, ~5 minutes per side depending on thickness, covered, can uncover to get more color for a minute at the end if needed. Can use thermometer to get it perfect, remove at 125f or 130f tops, it will come up another 5 degrees after you remove it.



Boom!

It's for sure sous vide. Reverse Sear works well too. Here some low quality filet's I made when I first got my sous vide. A lot depends on the cut of meat, how thick etc for what the best method is.
