I'm really random about it because my goal is basically just to have good cardio. Normally I throw a lot of swimming and jump rope into the mix too. I have no real structure for what I do for cardio.

-slowly build up mileage over weeks and months, with one longer run a week
-be very very very patient. get a chest hr rate monitor if you want to be sure you are going slow enough
you build endurance through long slow distance running over a long period of time. you peak it by doing harder workouts for a training block before you want to go for a new PR. But that endurance base is important, and you have to be super patient for it, because the results dont show right away

Also try out the stair machine, you can get a great cardio session on those without all the impact.
Get good shoes! Go to a running store.
