Rate my Summer Rolls from last night

These were easier than I thought. I love summer rolls as a healthier high protein snack. I ate them during the boring ass Niner/CB game. My wife assisted as well with soaking the wraps and rolling some.

Started with these wraps. Soaked in water of course.



Prepped some vegetables for crunch. I should have bought mint.





I used a container of Cilantro Lime shrimp from Costco because easy, on sale and great taste.



Homemade peanut sauce.



Finished



They definitely came out better than expected. I am guessing maybe 100-150 cals and around 10g protein each.

I probably banged your mom.

Do you think you got the ingredient ratios right? I’ve had some that were too much lettuce or wrapper. It looks like you went heavy on the shrimp, which is the way I’d prefer.

Ratios were good. I could have filled them up a little heavier but those rice wraps are a bitch to work with.

I did go heavier on the shrimp for flavor and protein content. I may try 1 single jumbo or a large prawn next time. And maybe add avocado or mint, maybe cilantro.

Actually looks spectacular OP. Would eat. I hate it when they stuff them with disgusting noodles, too many carbs.

Yup same. And it’s just a cheap way to make them. I want to maximize protein, nutrients and flavor.

Not bad OP, try slicing the shrimp 1/2, add some thin sliced belly if you like pork. Cucumber, Roman lettuce adds nice crunch, cilantro, mint, basil. I like rolling my with **** ton of veggies.
Peanut sauce looks legit too.

I skip the vermicelli and replace more veggies as rice wrap has more enough carbs.

Have never had summer rolls. But i love spring rolls, and I love spicy peanut sauce. Looks good man

Pork belly sounds like a great idea. Never thought of that. I was going to do a slow smoked brisket then cool it, slice it thin.

That looks great. I remember making rolls exactly like this a little while ago, peanut sauce and all.

There is a thai place near me that has the best peanut sauce i have ever had. But they also have this sauce that is kind of like a sweet chili sauce but with vinegar. Hard to explain but its lighter and more watery consistency than chili sauce. They serve that to dip their spring rolls into and its pretty good too.

I would not want it too watery so it grips to the rice wrapper. I was thinking about a honey chili but the honey cut with the good earth sweetener I have for less sugar but I may need another thickener base.
