Smoked some short ribs, are they meant to come out like this?
first time smoking short ribs, they were really tender and good tbf, but they kinda starting turning to mush in the last hour or 2, with the fat and meat layers starting to slide apart instead of staying uniform

pork ribs and shoulder etc are basically idiot proof when it comes to smoking, smoked some pork butt alongside the short ribs and it came out perfect

Honestly, braising short ribs are the best, them make some mash-taters, and use the juices to make a gravy. Top with a little goat cheese.
For smoking... I'd have used straight up regular beef ribs.

Any restaurant you go to they cook short ribs by braising them.
Any BBQ restaurant smokes beef ribs. Never seen short ribs smoked at a BBQ joint before.

I found some beef ribs in my freezer and I seared them then just let sit in my weber kettle for about 2 hours. No smoke just heat rubbed on some McCormick's steak seasoning.
