Smoked some short ribs, are they meant to come out like this?

first time smoking short ribs, they were really tender and good tbf, but they kinda starting turning to mush in the last hour or 2, with the fat and meat layers starting to slide apart instead of staying uniform

You need to man, buy a wireless set up or a probe. The snake method isn't gonna generate that much heat and the meat wouldn't melt like that in such a short period of time.
Beef ribs should looks like this:

This is an 8 lb prime rib I did in my oven at 500 degrees:

I doubt your weber got that hot, so maybe the cut you got.

Smoked for 3 hours then wrapped in a braising liquid for a further 2 hours

If i do them again might reduce the braising time to 1 hour

Mushy might be an over exaggeration, but they were deffo slightly on the too tender side

my suggestion is to get a decent thermometer for your grill and something like the wireless one shown below.

5 hours for short rib? and you don't know the temp? sounds excessive

That there's Texas meat, I can't anything like that here in KS. I have a buddy who's mom raises cattle but they only do steaks and ground beef. I will ask him to try to get me some for next time.

Well being it's a restaurant. They aren't getting peasant quality meats. If you have a Restaurant Depot near you, check them out . but you'll have to buy a whole rack.

I wouldn't mind buying a whole rack. I'm thinking about heading to this ranch and buying a quarter cow for $500. (Super Ded fkn Srs)

Honestly, braising short ribs are the best, them make some mash-taters, and use the juices to make a gravy. Top with a little goat cheese.

For smoking... I'd have used straight up regular beef ribs.
I'm not blessed with riches, but I am rich with blessings.
Thank you, LORD, my God.

This 100%

Any restaurant you go to they cook short ribs by braising them.

Any BBQ restaurant smokes beef ribs. Never seen short ribs smoked at a BBQ joint before.

I found some beef ribs in my freezer and I seared them then just let sit in my weber kettle for about 2 hours. No smoke just heat rubbed on some McCormick's steak seasoning.
