I suggest watching the hearing in its entirety. He explains this misconception, among others. Possible does not mean plausible or probable. And it is stated explicitly in proximal origins that lab scenarios cannot be ruled out 100%.

“Although the evidence shows that SARS-CoV-2 is not a purposefully manipulated virus, it is currently impossible to prove or disprove the other theories of its origin described here.”

“It is improbable that SARS-CoV-2 emerged through laboratory manipulation of a related SARS-CoV-like coronavirus.”

“In theory, it is possible that SARS-CoV-2 acquired RBD mutations (Fig. 1a) during adaptation to passage in cell culture, as has been observed in studies of SARS-CoV11.”

I now want you to read again the email you just posted. It is perfectly consistent with the language used in proximal origins.
The email is him describing possible explanations even if unlikely, i.e. not sufficient to 100% rule out certain lab leak scenarios.

And since that time the genome has been studied more extensively and it shows signs that are not consistent with molecular cloning techniques like Gibson assembly.
