There's a huge learning curve to it, I ruined more than I can remember until I started using the pizza screens. Those are a game changer. Launching into the oven was the hardest part without having the dough stick.

The finished product is awesome though. I have the pellet fed model and it gets 950+ degrees and cooks a 12" pie in about 90 seconds, so you have to rotate it frequently or you get a burnt section like I had.

True..funny how all the city folk go nuts over schit like this. In pittsburgh they opened these 'Anthonys coal fired pizza' places. TO hear ppl talk about em makes me laugh. I've had em and they are good but if they are even slightly over done...it's trash.

That's another option, too. I usually put it in on the screen, the bottom crisps up in about 30 seconds, I then lift the pizza up with the wheel and slide the screen out so it finishes cooking on the stone itself. This is fool proof and has worked 100% of the time.

Agreed. The thing is, you never want to bite too much dry dough at any time. So it's either gotta be thinner crust, or a somewhat buttery or oily crust in deep dish with toppings and cheese and sauce in every bite.
