Holy chit this is making me hungry. Would eat all of it in one sitting.
I'm making a FAT bone-in ribeye tonight and making a good amount of homemade bearnaise sauce to go with this and the steaks I have lined up for the next 3 days.
Trying to figure out what sides I want to make. I have 1 organic russet potato left from a neighbor and might just make my usual fries. Not sure what else I want to make.

It’s low effort because I didn’t do anything to elevate the other sides.
The veggies were just cut and roasted at the same time. I didn’t make any sauce or glaze for it.
I didn’t make a side of sautéed mushrooms for the meat and gravy—it’s why I had some with the carrots but got too lazy to actually pull out another pan to sautee them so I threw them in with the carrots. Would have used rosemary, red wine, Worcester sauce/soy sauce, garlic, cinnamon, etc.
Didn’t deglaze the roasting pan after and didn’t make a quick roux to make au jus. Normally with a mocha based rub I’d add a fruit element and wine to compliment the warm notes of the rub and beef.
Didn’t make mashed potatoes or scalloped potatoes from scratch.
For mashed, it’s cooked with milk rosemary lemon zest chicken stock to infuse flavor and creaminess. Dried. Mashed. Baking powder added to create fluffiness. Then using the cooking milk and butter to rehydrate it. Topped with parsley.
For scalloped… I make a cheesey bechamel sauce with chives and leeks. Sometimes with mushrooms.
I didn’t garnish or add fresh parsley.
That… is high effort. So in comparison, this was my equivalent of throw it all in the oven. Even Yorkshire pudding is not hard to do.

I do make pretty good biscuits too. I forgot about those as an option… I need to keep that in my back pocket for sides the next time I make something.
Also lol… that’s because of the rub I put on it. It was roasted in the oven.

Making ramen is also super intensive. Like… actual home made ramen where you boil the pork hock, meat, chicken bones to make a stock, then make the shoyu, braise the pork, make and brine the soft boiled eggs, prepare the noodles, prepare the toppings…. Takes 2 days for me.

Have you tried a sugar steak?
And also oooo, with that one russet, instead of fries a double baked potato would be delicious! Scoop, mash with roasted garlic and chives/green onions, caramelized onions, sour cream/cheddar, stuff back into the potato… top with more cheese/parmesan and parsley and rebake until melty and delicious
