Rate my protein prep method for dinner tonight /10 FIRE!!!

I have been into brick over cooking for a bunch of years which started with my quest for the perfect pizza. I branched off from just pizzas and have been doing lots of roasting/smoking also.

This was tonights dinner. 2 racks of baby backs and some roasted chicken breasts

Nope. Wife, 2 kids and one of our kids friends.

Yes on sides...only a few appropriate choices for such a fine dining experience. We chose french fries and onion rings. Corn and green beans as well

I don't get the point of cooking your own chicken. Everything else sure, but grocery store rotisserie is always tender and moist, plus priced as a loss leader so why bother making your own chicken?

Chicken is as moist as you could ever cook it. The wood roasting at low temps is nuts how juicy it stays. I pull the chicken out right at 160. It rests while the ribs finish off.

There was literally juice running out as I cut the chicken. That is the juice under the chicken breast as I cut thought it. It's orange since I coated inside and out with paprika (and black pepper and garlic salt)

I got left-overs if you wanna have some

Believe it or not the grocery store is actually in business for a profit and may be using the most poverty meat and spices they have.

Probably not marinated at all either.

Not only that but you get variety.

I made lemon herb chicken the other day, good luck finding that at the grocery store.
The billionaire and the beggar both have 24 hours in a day.

That's why grandma's apple pie rocks and yours sucks.

I cook chicken because it comes out freaking great! Rotisserie chicken are OK. (as long as you dont get the ones that are brined first and have 'flavor enhancers'. I will grab one in a pinch, actually not my favorite.

Roasting chicken with smoke and fire imparts different tastes.

Also the act of cooking itself is fun. My wife is not much for ribs, but the kids love them. She loves the chicken. I like both! Win win....plus I have great left-overs for lunch today.
