Aside from ethical issues, being vegan is healthy as fuark. It's true, you won't be jack3d as fuark completely laying away from meats, but fuark you feel 100000x as good. I tried it for 10 days and after the 5-day mark, I felt so clean, inside n out.

Just as you're saying they're not vegan, they equally can be.

Many of these people have this utopian idea about things... but i guarantee if they got everything they wanted they wouldn't be happy about the drastic increase in the cost of living they will suffer.
Beef is not the only thing consumed in cow slaughtering ... just about every part of the animal is used in a wide variety of industries. So for these people to simply compare the environmental costs of beef consumption to agricultural consumption and say, "See look!" is quite disingenuous and/or short sighted. Especially when you consider that only about 40-50% of a cow is used for food and the rest industrial purposes.
Could plants be used. Maybe. But i give industry much more respect than the random scientific out-of-context agendized crap i see online. If it were cheaper to use plants ... industry would use plants. It's pretty simple. For instance the fracking industry is likely transitioning from diesel to natural gas straight from the well head. Why? Because its more cost effective in many cases. The same logic is applied elsewhere.
