If you guys call a mixture of butter/lard/oil and flour "white sauce", then yes what we call "gravy" in the south is the same thing.

Yeah I'm pretty sure the whole world except you guys calls making a roux then adding milk and thickening it off a white sauce/bechamel, that's why I was surprised to learn what the gravy actually is.

Anyway I might give you a to someone using hnnng New Yorker porker flavoured sausage for extra flavour.

yeah I didn't say that right. flour and milk = gravy...we still call a roux a roux when its just the lard and flour.

but in the south when we talk about gravy (white gravy) its always got sausage or at least some kind of meat fat/lard/etc in it to flavor it.

Well made biscuits and gravy is actually pretty tasty. There are a lot of places that serve something resembling lumpy wall paper paste though, so beware.

Usually just do coffee. Will get French toast or a Belgian waffle on the rare occasion I go out for breakfast.

But if I'm cooking something:
Good Old Fashioned Pancakes

Prep

Recipe By:dakota kelly
"This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite."

Ingredients
1 1/2 cups all-purpose flour
3 teaspoons baking powder (not baking soda)
1 teaspoon salt
1 tablespoon white sugar

1 1/4 cups milk (warmed a bit so the butter won't coagulate)
1 egg
3 tablespoons butter, melted

Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
ETA: If you do want to try OP's recipe stick with Owens, or Bob Evans sausage...Jimmy Dean is awful.

Biscuits and gravy is a nice treat if you're on a vacation or something. So savory and delicious. Can't call it the GOAT cause it's not versatile or practical enough if you live a healthy lifestyle. I'll take an egg sandwich on sourdough all day for convenience, better macros, and I won't need a nap afterwards.

Well IMO it is the GOAT if you want to treat yourself. Most of the time though I'll eat very little for breakfast because like you said I'll wanna take a nap afterwards .. Most of the time it's a protein shake and that's it

Yea no doubt, my mom used that or a similar recipe, but with way too much salt. Lots of pepper too, which I didn't mind.
